KUMARA FRIES WITH KIMCHI COCONUT DIP (VG+GF) 

These baked sweet potato fries are seriously delicious, especially when served with the kimchi coconut dip that's bursting with flavour. Crunchy salty-sweet kumara fries and spicy tangy dip, a match made in heaven.

INGREDIENTS
One large orange kumara – washed, pat dried with paper towel, cut into fries (the thinner the best)
1 tablespoon cooking oil
Pepper
Sea salt
Living Goodness Kimchi Coconut Dip
Chopped chives

METHOD
• Preheat the oven to 200C.
• Place sweet potatoes on a baking sheet and drizzle with oil; season with salt and pepper.
• Toss to coat and spread out in a single layer.
• Roast until golden brown and slightly crispy, 25–35 minutes.
• While chips are cooking mix the Living Goodness Kimchi Coconut Dip with the chives and serve in a side bowl.

TO SERVE
• Place hot kumara chips on a plate alongside the bowl of dip. Enjoy!
