LAMB GYROS WITH HEARTBEET KRAUT 

A tasty midweek meal for the whole family. This take on the classic Greek Gyros are packed with goodness, double the recipe and you have the perfect leftovers for lunch the next day!

INGREDIENTS FOR MEATBALLS (Makes 12 Small)
500g lamb mince
Half red onion diced
1 clove garlic minced
½ teaspoon cumin
½ teaspoon coriander
1 teaspoon coriander
1 teaspoon oregano
1 teaspoon dill
1 egg

INGREDIENTS FOR TZATZIKI
¾ cup plain Greek yogurt unsweetened
1 clove garlic
¼ cucumber grated
10 mint leaves
1 teaspoon olive oil
1 tablespoon lemon juice
Salt
Pepper

INGREDIENTS FOR SALAD FILLING
40g Living Goodness Heartbeet Kraut
½ head iceberg lettuce shredded
10 cherry tomatoes sliced
¼ cucumber sliced
½ red onion sliced
4 store bought flat breads

METHOD FOR MEATBALLS
• Dice the onion finely, mince the garlic.
• In a bowl mix together the lamb mince, garlic, onion herbs and spices. Season with salt and pepper.
• Add in one beaten egg mix into the meat mixture.
• Using your hands shape 12 small meat balls.

METHOD FOR TZATZIKI YOGURT 
Grate the cucumber, squeeze out any excess liquid from the cucumber. 
• Chop the mint leaves and mince the garlic. 
• In a bowl mix together the yogurt, garlic, grated cucumber, mint, lemon juice, olive oil and season with salt and pepper.
• Heat a large frying Pan to medium heat with 1 tablespoon olive oil.
• Cook the meat balls on either side for 4-5 minutes, till cooked all the way through.
• Heat the flat breads in accordance with the instruction on the packet. 

METHOD TO ASSEMBLE THE GYROS
• Spread a generous amount of the Tzatziki onto the bread.
• Add in chopped iceberg lettuce, Heartbeet Kraut, red onion and cherry tomatoes.
• Place three meat balls into each flatbread, fold over and enjoy.
