SWEETENED GINGER, SEAWEED AND SUPER SUPERKRAUT SALAD (VG)

Whether it’s a low key summer BBQ or a sit down dinner with all the trimmings, this salad adds colour and nutrition.


Brimming with minerals that support hormone health, seaweed is a nutrient dense food that improves flavour as well. Serving the salad with Living Goodness Super Superkraut featuring wakame seaweed provides us with nutrients that help our gut, mood, and energy over the festive season.

INGREDIENTS
1 packet (5g) ceres organic seaweed sheets torn into small pieces
½ a small red onion very finely chopped
2 large carrots grated
½ cup finely sliced cabbage (red or green)
2 spring onions finely sliced
2 tablespoons of sesame oil
2 tablespoons of coconut sugar
1 tablespoon of water
1 teaspoon minced finely chopped fresh garlic
1 teaspoon of fresh ground ginger
A pinch or two of Celtic salt
3 tablespoons roasted cashew nuts (roasted in oven or dry pan on a hot element)
Handful of fresh coriander

METHOD
Combine the carrot, spring onion, cabbage, and red onion.
• Mix and stir well the coconut sugar with the sesame oil, add in the garlic, ginger, celtic salt, and water (Use more water if you prefer a lighter dressing).
• Combine all the ingredients and mix gently. Use half the sesame dressing and do a taste test! If a sweeter taste is required add the remainder of the dressing.
• Cover the salad with the roasted cashews and the coriander.
• Serve with a side of Super SuperKraut and a side of the seaweed.
