VEGAN SPICED KUMARA AND SLAW SANDWICH (VG)

This vegan smoky kumara sandwich is so hearty, healthy, and satisfying! It’s packed with spiced roasted kumara, probiotic fermented slaw and dressed in mayo.

INGREDIENTS
1 large orange kumara, peeled and sliced lengthwise 1 cm thick
1 teaspoon pimenton de la Vera or smoked paprika
½ teaspoon cumin powder
1 tablespoon of cooking oil
4 slices of seeded bread
4 tablespoons of Vegenaise (or standard mayonnaise)
1 cup Living Goodness Quick Draw Slaw
Spinach leaves
Salt
Black pepper

METHOD
• Preheat the oven to 200C.
• In a small bowl mix paprika, cumin powder and oil.
• Brush the spiced oil all over the kumara. Season generously with salt and pepper.
• Arrange kumara in a single layer without overlapping on a baking tray. Roast until tender, 20-30 minutes, turn slices over after 15 minutes.
• Remove from the oven.
• Spread one tablespoon of mayonnaise over one side of each slice of seeded bread.
• Top with sweet potato slices and Quick Draw Slaw.
• Mound the spinach leaves over the slaw, place other slice of bread on top and slice in half.
• Serve.
